The most logical thing, I believe, to do with excess peanut butter cups is to melt them and top with vanilla ice cream! This cookie is huge and a family favorite.

Instructions

Step 1
Preheat the oven to 350 degrees Fahrenheit. Grease a 10-inch cast-iron skillet with cooking spray.
Step 2
In the cast-iron skillet, mix together the peanut butter, butter, two sugars, egg, and vanilla extract with two spoons.
Step 3
Add baking soda. Stir in flour, a bit at a time. Chop most of the Reese's Mini Peanut Butter Cups into tiny pieces. Pour into the skillet and mix. Top with the remaining cups.
Step 4
Bake for 15-20 minutes, or until golden brown. TIP: My cookie actually got lighter, from dark brown to golden.
Step 5
Top with Reese's Pieces and allow the cookie to cool for 3-5 minutes. Serve with ice cream.
