Instructions

Step 1
Combine half of the steamed broccoli, cream cheese, heavy cream, and 1/2 cup of water into a food processor or blender. Process till smooth.
Step 2
Transfer mixture into large pot. Whisk in bouillon, pepper and 1 cup water.
Step 3
Slowly add in xanthan gum and whisk.
Step 4
Bring to a boil, then simmer for 5 minutes.
Step 5
Stir in cheddar cheese.
Step 6
Gently stir in remaining broccoli florets.
Step 7
Let rest 5-10 minutes then garnish with bacon crumbles if desired.
