Instructions
Step 1
Melt the butter in a large skillet over medium heat.

Add the sliced mushrooms to the skillet and sauté until they are tender and browned, about 5-7 minutes.

Add the baby spinach to the skillet and cook until it is wilted, about 1-2 minutes.

In a separate bowl, whisk together the eggs, heavy cream, salt, and pepper.

Pour the egg mixture into the skillet with the mushrooms and spinach. Cook over medium-low heat, stirring occasionally, until the eggs are set and cooked through, about 10-12 minutes.

Sprinkle the shredded mozzarella cheese over the top of the egg mixture and let it melt.

Serve the dish hot, garnished with additional salt and pepper to taste, if desired.
