Instructions

Step 1
Mix flours / grains with water, vinegar, and flax meal. Soak overnight or at least 12 hours.
Step 2
Proof yeast in warm water and honey.
Step 3
Add remaining ingredients and mix thoroughly.
Step 4
Divide between two greased, 1/2-sheet pans lined with silicone mats or parchment paper. Allow to proof at least 20-30 minutes. Bake at 350 for 20-22 minutes
Step 5
Ideally, cut when bread is still warm, but no longer hot or steaming, and invert pans onto a cutting board. Can also be baked as mini loaves or muffins (rolls).
Step 6
Stores well in the refrigerator for 6-8 days. Or freeze for up to several months. Texture is a bit more crumbly once thawed, but not too bad.
