Instructions
Step 1
Oven 350. Peel carrots. Slice ¼ inch thick on the bias.
Step 2
In a saute pan, melt butter then sweat carrots over med heat, 2 min.
Step 3
Add stock and bring to a simmer.
Step 4
Cover witha parchment lid and bake in oven until tender, 10-15 min. Remove carrots from pan, leaving the liquid. Set carrots aside.
Step 5
On stovetop, reduce the remaining liquid to a syrupy glaze.
Step 6
Add carrots back to pan. Toss to coat with glaze and heat through. Season to taste.
