Instructions
Step 1
Add water to medium saucepot and bring to boil on medium-high.
Step 2
Preheat large sauté pan on medium-high 2-3 minutes.
Step 3
Add sausage and brown 5-7 minutes, stirring to crumble meat, until no pink remains and 160°F.

Sprinkle in flour; cook and stir 1 minute.
Step 5
Stir in milk. Cook 2-3 minutes, stirring constantly, until hot and gravy has thickened.

Stir in pepper and reduce heat to low and keep warm.
Step 7
Stir vinegar into boiling water. Reduce heat to medium-low to maintain water at 170°F.

Crack eggs into individual small bowls.
Step 9
Carefully pour eggs into simmering water, one at a time, allowing each to start poaching before adding the next.

Poach eggs 3-5 minutes then carefully; carefully remove eggs and hold on paper-towel lined plate. Repeat with remaining eggs if needed.
Step 11
Heat ham following package instructions.
Step 12
Slice biscuits in half horizontally and toast.
Step 13
Top each biscuit half with one slice ham, 2 tablespoons sausage gravy, and one poached egg; add extra gravy on the side.
