Ingredients

For Strawberry Reduction
For cakes
3 cupsflour
2 cupssugar
1 ½ Tbspbaking powder
¾ tspsalt
¾ cupoil
avocado
1 ½ cupsstrawberry reduction
1 tspvanilla
1 tsplemon juice
4eggs
beaten
pink food coloring
Natural, optional
For Buttercream
1 cupbutter
room temperature
8 cupspowdered sugar
6 TbspStrawberry Reduction
2 Tbsplemon juice
2 Tbspheavy whipping cream
Instructions
For Strawberry Reduction
Step 1
Add frozen strawberries, sugar, lemon juice and zest to a medium saucepan.
Step 2
Bring to a simmer over medium heat and allow to simmer on medium/low for 20 - 30 minutes stirring often to keep it from sticking to the bottom of the pan.
Step 3
Once it has thickened, use an immersion blender to blend smooth
Step 4
Pour the reduction through a sieve for a smoother texture without the seeds
Step 5
Let cool in the fridge or freezer while working on the next steps
For cakes
Step 6
Preheat oven 325F
Step 7
Grease 2 9" cake pans

In a large bowl whisk dry ingredients
Step 9
Add in oil, strawberry reduction, vanilla, lemon juice and stir until combined
Step 10
Add in beaten eggs and food coloring, mix until combined
Step 11
Pour into pans and bake 25 - 35 minutes or until toothpick comes out clean
For Frosting
Step 12
Beat room temperature butter until like and fluffy (about 5 minutes)

Add 1/2 of the powdered sugar and beat again until smooth
Step 14
Add strawberry reduction, lemon, and vanilla and beat until smooth
Step 15
Add remaining powdered sugar, beat until smooth
Step 16
Add heavy cream and beat another minute until fluffy and light
Assembly
Step 17
Once cakes have fully cooled, pipe frosting in a ring onto bottom layer. Fill ring with remaining strawberry reduction.
Step 18
Place the other cake layer on top and then frost with remaining buttercream
Step 19
Finish the top with fresh cut strawberries
