2 cupssugar

1 cupoil

2 tspcinnamon

2 tspbaking powder

1 tspbaking soda

4eggs

4carrots
large, shredded

Instructions
Step 1
preheat oven to 350
Step 2
combine everything besides carrots. beat until smooth. Add carrots and mix well
Step 3
pour into lined muffin pan, bake for 20-25 minutes
Step 4
if baking extra batter in a pan bake for at least 45 minutes
Step 5
Optional cream cheese topping: blend topping ingredients together until smooth and top as desired
