Ebi Curry (Creamy Shrimp Curry)

When making curry, we wonder what it would taste like with all these different ingredients. Today we have simmered some mild, creamy curry with shrimp. It goes perfectly well with rice or bread. Enjoy it to your taste!

Instructions

Step 1
.Julienne cut onion and carrot, and thinly slice lotus root and garlic. Peel the shrimp and wash in cold running water. Leave on a strainer to remove water and marinate with salt and pepper.

Add butter in a heated pan and put onion. Caramelize on low heat for about 10-15 minutes until the onion turns brown. Stir constantly. When the onion is caramelized, add carrot and stir-fry.

Add water and simmer. Blend well with a hand blender and mix in some curry roux. When the roux is evenly melted in, add milk.

On a heated pan, stir-fry minced garlic. Add shrimp and cook both sides until it turns golden yellow. Remove excess moisture of lotus root and garlic slices, and fry in oil heated to 170˚C.
Step 6
.Enjoy with rice while it’s still warm.

1. Put rice in a bowl and put it upside down on a plate to make a dome of rice.

2. Sprinkle some furigake and fried garlic chips over the rice.

3. Pour some curry around the rice and garnish with lotus root and shrimp.

4. Sprinkle some parsley and garlic chips.
