750gboneless chicken thighs
½ cupplain yogurt
5garlic cloves
minced
1 tablespoonginger
minced, or finely grated
2 teaspoonsgaram masala
1 teaspoonturmeric
1 teaspoonground cumin
1 teaspoonred chili powder
1 tspgarlic powder
1 tspcoriander powder
1 tspSalt
Sauce
2 tablespoonsolive oil
50gbutter
1onion
large, sliced or chopped
5 clovesgarlic
minced
1 tablespoonginger
minced or finely grated
2 teaspoonsground cumin
2 teaspoonsgaram masala
1 teaspoonground coriander
2tins tomatoes
1 teaspoonred chili powder

Instructions
Step 1
Begin with cutting the chicken thighs into cubes and finely chopping the garlic and ginger.
Step 2
Place in a bowl and add the yoghurt and spices. Mix thoroughly and cover. Leave to marinade in the fridge for 1 hour or overnight for best results.
Step 3
In a small bowl add the yeast, sugar and warm water. Mix well and leave to the side for ten minutes.
Step 4
Add the flour to the bowl along with the salt. Mix and then add the yeast water, yoghurt, oil and warm milk. Combine into a dough and then knead for 5-10 minutes until smooth. Leave in an oiled bowl and cover for one hour.
Step 5
Take the chicken out of the fridge. Place a pan on high heat and add oil, followed by the garam masala mix. Fry for one minute and then add the chicken. Sear on all sides and then put to the side.
Step 6
Add the diced onion, sweat down for 2 minutes and then add the garlic and ginger. Stir and add the spices followed by the tin tomatoes and a splash of water. Mix well.
Step 7
Then blend the sauce in with either a hand blender or in a food processor. Add back to the pan and add the butter and cream. Stir well and re-add the chicken. Leave to simmer on low.
Step 8
Cut the dough into 8 equal pieces. On a floured board, roll them out a couple of times then sprinkle over the garlic and coriander. Fold into the dough and then roll out into a circular shape.
Step 9
Get a pan on a high heat and add butter. Add the dough and once it begins to bubble flip over.
Step 10
To serve, top with a little more cream and coriander to garnish.
