Mushroom White Wine Sauce

Anytime I have an excuse to cook and drink wine at the same time I take it. This sauce is fantastic over chicken, seafood, vegetables, or pasta. So before we dive in go grab a glass. (I like to use Chardonnay)

Instructions
Step 1
Heat 1 oz of butter in saucepan on medium. Once butter is melted add mushrooms and begin to saute which simply means cook until they begin to brown. Be careful not to overcook because they will continue to cook while reducing wine in next step. Add just a small pinch of salt to pull the moisture out of mushrooms
Step 2
Once lightly browned add wine to pan and stir to get the goodness from the bottom of the pan. Cook until wine is reduced by half (watching the wine in the pan disappear will be upsetting I know but trust the process)
Step 3
Slowly stir in warm heavy cream
Step 4
Remove from heat and swirl in remaining butter.
Step 5
Season to taste with salt, pepper and lemon juice a drop at a time.
