Ingredients

160gshell pasta
large
1onion
diced
2garlic cloves
minced
1tin chopped tomatoes
1 tspdried basil
or fresh
1 Tbsporegano
½ tspChilli Flakes
more or less depending on how spicy you like it
1 Tbsptomato puree
1 tspsugar
300gchicken breast
diced
50chorizo
diced
1 Tbspsingle cream
or more if you think it needs it
spinach
mozzarella grated
parmasan
grated
Instructions
Step 1
Start by frying up your onion until soft. Add your garlic and fry until fragrant. Then add your chopped tomatoes, tomato puree, sugar and spices. Mix well and cook until thickened and add a splash of cream.
Step 2
Meanwhile, boil your pasta shells until al dente.
Step 3
Next fry off your chicken and chorizo and once cooked through add a handful of spinach, a few spoons of your tomato sauce mixture, some mozzarella and some parmesan.
Step 4
Mix until all combined and melted at desired consistency. Taste and add more tomato/cheese seasoning as required.
Step 5
Once everything is finished cooking its time to stuff the shells. Fill each shell with the chicken mixture and add it to a ovenproof dish. Once all shells are filled spoon the tomato sauce mixture all over the top (and more cheese if desired) & then bake until bubbling and golden.
