Instructions
Step 1
1. Dump the potatoes in the Instant
Pot, then add diced onion, broth,
garlic powder, and salt.
Step 2
2. Cook for 8 minutes on high pressure and do a quick release.
Step 3
Add the sour cream and milk. (Feel free to add in less milk or more sour cream if you'd like a thicker consistency!)
Step 4
Mix well! The potatoes should mostly break down when you do this. If you want it completely smooth use an immersion blender to get rid of clumps.
Step 5
Once the soup is cooled you can add the finished soup into gallon- sized freezer bags and freeze flat, or use souper cubes/glass containers to save for individual use later!
