Instructions

Step 1
Remove giblets and neck from cavity. Dry skin with paper towel.
Step 2
Carefully separate skin from breast and thighs and drumsticks.
Step 3
Mix crushed garlic, liquid smoke and sage in small cup.
Step 4
Combine the salt and pepper and use it to rub the entire cavity.
Step 5
Rub the smoky sage paste under the loosened skin.
Step 6
Quarter an orange and squeeze the juice under each side of the breast and under thr skin of each thigh and drumstick.
Step 7
Place the squeezed orange quarters into the cavity.
Step 8
Place the chicken into a roasting pan with any vegetables you would like to roast. Sprinkle the chicken and vegetables with olive oil.
Step 9
Bake at 350 for about 2 hours. Let the chicken rest for 20 minutes before carving.
