Cheesy Broccoli Rice

Creamy risotto-like rice with cheddar, broccoli and (optional) pieces of chicken breast. A one pot family-friendly meal perfect for a busy weeknight.

Ingredients
6 servings
2 tablespoonsbutter
½ cupdried onion
minced
½ teaspoongarlic powder
1 ½ cupsarborio rice
1 cupchicken broth
3 cupschicken broth
2 teaspoonsalt
1.5 poundsboneless skinless chicken breasts
1 poundfresh broccoli florets
or frozen
6 ouncescheddar cheese grated
1 cupshredded parmesan cheese
salt
to taste

Instructions
Step 1
Cut thawed chicken into chunks
Step 2
Set Instant Pot to sauté
Step 3
When display says HOT, add butter and swirl it around in the pot to melt it
Step 4
Once the butter is melted, add in the rice, garlic powder, and onion. Stir for 1 minute
Step 5
Add in 1 cup of the broth, stir for 2 minutes
Step 6
Add the remaining 3 cups of chicken broth
Step 7
Add the 1 teaspoon salt

Lay the chicken on top

Turn off Saute function

Cover the Instant Pot and secure the lid

Make sure the valve is set to SEALING

Set the manual/pressure cook button to 10 minutes (high pressure)

Once time is up, allow the pot to sit for 10 minutes of natural release

Move the valve to venting to quick release the remaining pressure

If using frozen broccoli florets, put them in a colander and run under hot water for a few minutes. Shake off excess water and stir into the rice. Put lid back on and let sit for 20 minutes.
Step 16
If using fresh broccoli florets you can do one of two things. First and faster idea is to put the florets in a glass bowl with a quarter cup of water and put them in the microwave for 4-5 minutes, until the broccoli is steamed and reaches your desired cooked consistency. Second idea is you add the fresh broccoli to the pot after the pressure has released and then put the lid back on and let the broccoli cook on the warm setting with the lid on for about 20 minutes.

Stir in the cheddar and parmesan cheeses
