Ultimate Poached Egg and Smoked Salmon Brunch

This has to be one of my all time favourite go to brunch recipes, it’s quick to make filling and tastes amazing.

Instructions
Step 1
Mash the avocado in a bowl, add the juice of 1/2 a lime, tablespoon of olive oil and salt to taste. Cover and set aside in the fridge.
Step 2
Chop the baby plum tomatoes into quarters and add to a separate bowl. Dice 1/2 a red onion, add a tablespoon of olive oil, tablespoon of balsamic vinegar and chopped basil leaves. Mix until everything is well incorporated and set aside.
Step 3
Drizzle olive oil over the ciabatta and grill until toasted.
Step 4
Whilst the bread is toasting, poach eggs until cooked through but yolk is still runny. Remove from pot and drain on kitchen paper.
Step 5
Once the ciabatta is toasted cut the garlic clove in half and rub on top.
Step 6
Time to put everything together 🙌🏾 - layer the smashed avocado on top on the bread, top with the tomato and red onion mixture, add smoked salmon and finish with the soft poached egg. Season with salt and pepper to taste and enjoy 😁
