Instructions
Step 1
Place pork butt in a sauce pan on medium/high heat and sear all sides. Season with salt and place butter in the pan. Baste.
Step 2
Place chopped veggies, herbs, and seasonings in a roasting pan. Place pork butt onto the veggies along with the basting sauce. Then pour water over the veggies.
Step 3
Cover the roast with foil and place in the oven for 4-5 hours.
Step 4
Place 1/2 cup of the juice back into the sauce pan in order to thicken the sauce. Once reduced and baste for a few more minutes.
Step 5
Shred and serve with the veggies.
