1kgskinless chicken thighs
chunks

1 cupbrown onion
sliced

2carrots
medium

2 stickscelery
diced

40gFrench onion soup mix
2 x 825gcans apricot halves in syrup
Instructions
Step 1
Place chicken in a casserole dish or in a camp oven. On top of chicken, put onion, carrot and celery, sprinkle over with French onion soup mix and nectar from apricots. If there is not enough fluid add a small amount of water.
Step 2
Simmer for 2 hours, check chicken is cooked then add apricots stir, cover. Rest for 10 minutes then serve.
