Instructions

Step 1
Preheat oven to 425°F.
Step 2
Drain the liquid in the can of chickpeas. Arrange chickpeas on one half of a baking sheet and diced sweet potato on the other. Drizzle sweet potato with olive oil and season with salt and pepper. Bake for 30-40 minutes, until chickpeas become crispy in texture and sweet potato is fork tender.
Step 3
To assemble, add quinoa to the bottom of the bowl and top with chickpeas, sweet potato, and spinach. Pour 2 tablespoons of dressing over each bowl. Sprinkle with feta and almonds to serve.
