Ingredients
1 servings
1 slicewhole wheat sourdough bread
3 tablespoonscabbage kimchi
chopped up finely/bitesized pieces
2 slicesold cheddar cheese
3 teaspoonskewpie mayonnaise
1green onion stalk
chopped up finely
1king oyster mushroom
shredded
2 teaspoonssesame oil
1 patbutter
Serve with on the side
Instructions
Step 1
Put the sesame oil and butter pat into a medium to medium-high hot pan, once shimmering add the shredded mushrooms. Let them cook undisturbed for about a minute so they the can get golden brown then flip, repeat until well cooked
Step 2
Add kimchi to pan, and let cook stirring frequently until caramelized. Once done set aside, and wipe out pan
Step 3
Cut the bread slice in half and place one cheddar slice on one side and another cheddar slice on the other half. On one half, add kimchi mixture, drizzle with some of the kewpie mayo, and then sprinkle with green onions. Put the other half on top.
Step 4
Drizzle the top of the sandwich with some of the kewpie mayo, and spread it across with a knife. Place the sandwich mayo side down on a medium hot pan. While in the pan, drizzle the top of the sandwich with the remaining kewpie mayo, and spread it across with a knife.
Step 5
Once it starts getting golden brown on the bottom, press gently the sandwich and then flip. Cooking the other side until golden brown.
Step 6
Serve with chopped orange on the side (and some iced green tea if you have it!)
