Ingredients
8 servings
3center cut bacon slices
1/2 in pieces

2.5 lbsboneless chuck roast
1/2 cubes

2 cuponion
chop medium

5 cupcremini mushrooms
sliced

2garlic cloves
minced

3 tablespoonall-purpose flour

1 bottlebeer

2 cupscarrot
1/2 inch thick, slices

1 ¾ cupsparsnip
1/2 inch thick, slices

1 cupunsalted beef broth

2 tablespooncountry style Dijon mustard

1 teaspoonsalt

1 teaspoondried thyme

½ teaspooncaraway seeds

½ teaspoonfreshly ground black pepper

1bay leaf
Instructions
Step 1
Cook bacon in a large Dutch oven on medium heat until crisp. Remove bacon set aside reserving drippings. Add 1/2 of the beef to drippings cook for 5 minutes browning well. Remove beef set aside, add remaining beef procedure.
Step 2
Add onions to oven saute 4 minutes stir in mushrooms garlic saute 4 minutes or till half of liquid evaporates. Stir in flour, cook stirring occasionally for 2 minutes, stir in beer, scraping bottom of oven loosening bits and add bacon, beef, carrots and remaining ingredients bring to a boil. Cover, reduce heat simmer for 2 hours or until beef is tender. Discard bay leaf before serving.
