Instructions
Step 1
Melt butter in a large pot on medium heat.

Step 2
Stir in the onions and garlic. Cook for 5-7 minutes.


Step 3
Add flour and mix well.

Step 4
Whisk in the vegetable broth and milk until completely incorporated.


Step 5
Bring mixture to a boil. Reduce heat to medium and add broccoli and carrots. Cook for 10 minutes.


Step 6
Add cheese and stir until melted.

Step 7
Remove about 1/4 c of soup and blend in a high speed blender. Add back to the pot. Stir, add salt and pepper to taste, and serve.
