Instructions
Step 1
Preheat oven to 200C (fan)
Step 2
Prepare baby peppers, wash, trim off the tops with the stems and remove the seeds.
Step 3
In a large bowl combine ground beef , onion, coriander (reserve some for garnish), rice, salt, pepper, chilli flakes, Mediterranean mix, dried basil, nutmeg, and olive oil. Mix well.
Step 4
Stuff the baby peppers with ground beef mixture. If you got any leftover stuffing, make small meatballs, so we can add them in between peppers.
Step 5
Cover the bottom of an ovenproof baking dish with tomato sauce. Arrange peppers and meatballs onto the baking dish. Pour the remaining tomato sauce evenly over the peppers.
Step 6
Cover with lid or aluminium foil and bake at 200C (fan) for 50 minutes - 1 hour.
Step 7
Remove the lid, add shredded mozzarella on top and bake for another 10 minutes.
Step 8
Garnish with coriander and enjoy!
