Instructions

Wedges

Step 1
Preheat oven to 220'C/200'C fan Chop potatoes into wedges (no need to peel). Place on large baking tray and drizzle with oil, season with salt and pepper then toss and coat. Roast on top shelf for 25-35 mins. Turn halfway through

Topping

Step 2
Trim and coarsely grate the carrot . Grate the cheese. Drain Black Beans. Pop half in a bowl and roughly mash with a fork.

Meanwhile cook the chicken with a drizzle of oil and season with salt and pepper. Fry until golden brown for about 8-10 mins. When cooked transfer to a chopping board and roughly chop into small pieces
Step 4
Return the empty pan and bring to a medium heat. Add BBQ sauce, cider vinegar, chipotle paste, water, salt and pepper. Stir to combine and bring to the boil.
Step 5
Stir in grated carrot and black beans (both mashed and whole) through the BBQ sauce mixture and cook until thickened, 4-5 mins. Once thickened stir in chopped chicken and simmer for 2 mins, then remove from heat. Taste and season with salt and pepper if needed.
Step 6
When wedges are cooked transfer them to an ovenproof dish. Spoon chicken and BBQ mixture on top. Sprinkle over the cheese and return to the oven and bake for 5-6 mins.
