Chicken Breast and Turkey Sausage Gumbo

This uses a Zatarain's boxed gumbo mix and additional ingredients to make a hearty, filling meal that doesn't take forever to cook - please note, this is NOT traditional gumbo in any way, it is more gumbo inspired

Step 1
Cook chicken and cut into bite sized pieces - I like to cover the chicken in Italian dressing, salt and pepper, and roast at 375 degrees for 20 to 30 minutes - until a meat thermometer inserted in the widest part of the chicken reads 165 degrees - but the chicken can be cooked in any manner you prefer
Step 2
Cut sausage into rounds and chop pepper into your preferred size pieces
Step 3
Follow instructions on Zatarain's package - I like to add the chicken and sausage right away, and add the corn and pepper about 5 minutes before the end of the cook time
Step 4
I use this as a meal prep option - once finished cooking, I ladle into 5 pint sized deli containers and take one to work for lunch every day - because there is no seafood, it can stay in the fridge for up to 5 days, or you can freeze and reheat it if you prefer
