Chicken Breast and Turkey Sausage Gumbo

This uses a Zatarain's boxed gumbo mix and additional ingredients to make a hearty, filling meal that doesn't take forever to cook - please note, this is NOT traditional gumbo in any way, it is more gumbo inspired Since the Zatarain's doesn't generate nutritional info on Whisk, here is the nutritional info from one 7oz package, which has 8 servings. Each serving has the following: 80 calories 0 fat 0 cholesterol 750g sodium 18g carbs 1g fiber 0 sugar 2g protein

Instructions

Step 1
Cook chicken and cut into bite sized pieces - I like to cover the chicken in Italian dressing, salt and pepper, and roast at 375 degrees for 20 to 30 minutes - until a meat thermometer inserted in the widest part of the chicken reads 165 degrees - but the chicken can be cooked in any manner you prefer
Step 2
Cut sausage into rounds and chop pepper into your preferred size pieces
Step 3
Follow instructions on Zatarain's package - I like to add the chicken and sausage right away, and add the corn and pepper about 5 minutes before the end of the cook time
Step 4
I use this as a meal prep option - once finished cooking, I ladle into 5 pint sized deli containers and take one to work for lunch every day - because there is no seafood, it can stay in the fridge for up to 5 days, or you can freeze and reheat it if you prefer
