These CRUMBL inspired coconut lime sugar cookies are made with a soft coconutty limey sugar cookie base then topped with a tart lime frosting and decorated with a lime wedge.

Instructions
Preheat oven to 350Β°F
Step 1
Line baking sheet with parchement paper; set aside.
Step 2
Cream butter, oil, sugar, & powdered sugar in lg. mixer bowl.
Step 3
Add egg, lime juice, lime zest, & coconut extract to sugar butter mixture; mix until combined. Add flour, salt, & baking powder ; mix until combined.
Step 4
Using lg. cookie scooper, scoop out 9 equally sized cookie balls; place on parchment-lined baking sheet.
Step 5
Spray bottom of glass or measuring cup with cooking spray, dip into plate of sugar, & gently press each cookie down to β
β-1/2β thick. (Make sure not to smash cookies too thin.)
Step 6
Bake (8 min.). Cool on baking sheet (10 min.); transfer to a wire rack to cool fully before frosting.
Tangy Lime Frosting
Step 7
In mixer bowl using paddle attachement, cream butter, powdered sugar, lime juice, & lime zest until light & fluffy.
Step 8
Generously spread lime frosting on chilled lime coconut cookie, top with lime wedge, & serve!
Notes
Step 9
If the buttercream is a little too thin, place it in the fridge (10 min.); mix again to get it fluffy. This should allow butter to set & become thick again. β This often happens if the butter was too soft to start with or if your kitchen is really hot.)

Store in fridge (up to 7 days.)

Freeze in airtight container (up to 2 mo.) Just place them in the freezer to thaw overnight before enjoying them!
Step 12
Let your cookie cool completely before topping them with the frosting- Make sure that your cookies are fully cooled down before frosting or the frosting will melt and you will end up with a soupy mess and not so pretty cookies!
