Step 1
1) Preheat the oven to 400 degrees. Cut a small part of the bottom of the pepper and cut the top of the pepper and set aside. Carefully remove the seeds, etc. 2) In a bowl, mix the remaining ingredients together. Stuff in the pepper & put the top reserved “top” on the pepper. Place in a small ovenproof pan. Pour a couple of inches of the vegetable stock in the pan. 3) Put a sheet of aluminum foil over the top & cover it tightly. Bake for 25 minutes. Then rotate the pan. Bake an additional 25 minutes. After that, remove foil. If desired, put 2-3 slices of Parmesan cheese on top. Put pan back in the oven. Bake 5-10 minutes or until golden brown.
