My version of another pesto chicken & veggies recipe that I'm using for meal prep this week.

Instructions

Step 1
Preheat oven to 450F

Step 2
Clean the potatoes and cut them into 1 inch cubes. Coat them in a few tbsp olive oil, salt & pepper, garlic powder. Roast potatoes for 35 min at 450F.
Step 3
When there's about 15 min left on the potatoes, heat 2 tbsp olive oil in a pan on med-high heat. Cook the chick'n strips until they're brown on all sides.
Step 4
Turn the heat down to low. Add the potatoes and pesto and toss until coated. Add the tomatoes and mix.
Step 5
Serve or allow to cool and split into servings for future meals. Reheat in the microwave.
