Ingredients
4 servings

1 tablespoonsesame oil
or oil of your choice

2eggs
beaten

2cloves garlic
minced

1onion
medium, sliced

1 cupcarrots
cut to match sticks

2 cupschicken
cooked & diced, bacon or ham or leftover roast

¼ cupsoy sauce

500mlchicken stock

2 cupsjasmine rice
washed, or basmati, uncooked

Instructions
Step 1
1 Heat up your AIO on the ‘sauté/sear high temp’ setting.
Step 2
2 Lid open. Place the oil in the bowl. Scramble your eggs in the pot for 1 minute, then remove.
Step 3
3 Pop the onion and garlic in the bowl and sauté 2 minutes or until translucent and soft. Then hit ‘cancel’.
Step 4
4 Add the chicken and ham (or whichever meats you fancy) carrots, rice, soy sauce, chicken stock, and eggs back in the bowl and mix well, making sure the rice is covered by the liquid.
Step 5
5 Put your lid on and set the regulator valve to ‘seal position.
Step 6
6 Press ‘Pressure cook’ then select ‘Manual’ and adjust the time for 10 minutes.
Step 7
7 When done turn the regulator valve to ‘vent’ for a quick release.
Step 8
8 Remove lid and while still hot, carefully stir in frozen veggies and spring onions.
