Zucchini Cookies with Oatmeal, Nuts, Craisins

Ingredients

3 CZucchini
grated with skin
0.25 Cbutter flavored shortening
¼ cbutter
2eggs
1 cbrown sugar
packed
½ csugar
2 topvanilla
2 cOld-fashioned oats
3 call-purpose flour
1 ¼ cpecans
chopped
1 ccraisins
1 tspbaking powder
½ tspsalt
½ tspbaking soda
1 tspcinnamon
2 cpowdered sugar
2 Tblbutter
melted
2 Tblfresh lemon juice
or juice from 1 1/2 lemons
Instructions
Step 1
Cream butter, shortening, sugars. Add eggs and beat until fluffy.
Step 2
Add zucchini and vanilla and mix well..
Step 3
Mix flour with dry ingredients (salt, baking powder, baking soda, cinnamon, oats) with whisk and add to creamed mixture. Mix until just blended.
Step 4
Add nuts and craisins, mixing lightly until distributed throughout recipe. Dough will be wet but should hold soft shape when scooped onto cookie sheet.
Step 5
Bake at 375 F for 12 minutes (350 in convection oven) until cookies are set. Allow to sit on cookue sheet for 2 minutes before moving to cooling racks.
Step 6
optional: Mix 2 C powdered sugar, 2 Tbl melted butter, and 2 Tbl lemon juice (or 2 Tbl milk plus 1 tsp vanilla instead of lemon juice) together and drizzle over tops of cookies. Enjoy.
