Instructions

Step 1
Preheat over at 200c. Place ocean trout, skin side down on an oven tray lined with baking paper.
Step 2
Combine garlic, sumac, sugar, spices and 2 tblspn oil in a bowl, season to taste with salt & pepper.
Step 3
Rub mixture over trout and roast until medium and crust is golden (approximately 20 minutes).
