Chocolate Espresso Buns

Instructions

Step 1
Whisk to combine your brown butter, evaporated milk, sugar, eggs and salt. Make sure the mixture is warm so that the yeast activates.
Step 2
Add in your flour and instant yeast. If kneading by hand, mix the dough with a wooden spoon until it comes together, and then oil your hands before kneading for about 12 minutes or until the dough is tacky to touch. If using a stand mixer with a hook attachment, knead for about 6 minutes. Cover and allow the dough to rest in a warm place for about an hour, or until it doubles in size.
Step 3
Remove your risen dough from the bowl and divide into 8 balls. Flatten each ball and place a piece of chocolate (1/2 oz) in the center. Pinch the ends of the dough together to close and roll the ball in your hand.
Step 4
Place the chocolate stuffed balls on a buttered pan and slightly press down on the balls to flatten. Cover and let it rest for another 30 minutes. In the meantime, preheat your oven to 400f.
Step 5
Brush the dough with egg wash and bake in the middle rack for 18-20 minutes, or until it’s nicely browned on top. Start checking your bread at the 15 minute mark to make sure it’s browning on top without burning.
Step 6
In the meantime, make your espresso glaze by combining the coffee and sugar in a in a saucepan over medium heat. Let it come to a boil, then reduce to low and let it simmer for about 3 minutes. Remove from heat and let it cool down.
Step 7
Once the chocolate buns are done, brush the top with the espresso glaze. Let it cool down for at least 15minutes as the chocolate will be very hot. Enjoy!
