Taco Tuesdays are our favorite around here!!! I like to switch up my recipes while still having that taco Tuesday feel!

Step 1
First preheat oven to 400 and brown your ground beef
Step 2
While you’re cooking the beef, in another pot melt your butter on medium high heat
Step 3
When your butter is melted completely, add in heavy cream and whisk until combined, then slowly whisk in the shredded cheese! I added Cajun seasoning in my cheese sauce
Step 4
Drain grease from meat and add corn, beans, tomatoes, seasonings (measure with your heat!) and mix until well combined

Next grease a 9x13 pan and cut tortillas in half and line bottom of pan with them
Step 6
Now you will just layer! I started with meat mixture now and added that over the tortilla layer. About 1/3 of the meat

Then add a layer of the cheese sauce!
Step 8
Repeat the layers 2 more times. Top the final layer with shredded cheese. Last cook in the oven uncovered for 20 minutes. Top with desired toppings and enjoy!!! I served with tortilla strips and salsa!
