Quinoa and Feta Fritter with Poached Egg

This is a simple but very tasty breakfast idea. The quinoa and feta cheese works o well together. Enjoy!

Instructions

Step 1
Cook the quinoa according to packet instructions.
Step 2
Place the cooked quinoa, feta, spring onions, garlic and sweet smoked paprika into a food processor. Lightly beat one of the eggs and add to the mixture. Blend until well combined and season well.
Step 3
Melt the oil in a 12cm non-stick frying pan and preheat the grill to medium to hot. Add the quinoa mixture and press down with the back of a spoon to make a smooth cake. Fry for 3-4 minutes, then place under the grill and cook for 3-4 minutes, or until set and golden.
Step 4
Meanwhile, poach the remaining egg: bring a pan of water to a gentle boil and crack in the egg. Poach at a gentle simmer for 3-4 minutes, or until cooked to your liking
Step 5
Top the quinoa fritter with the poached egg and top with the red chilli and parsley.
