Instructions

Step 1
Begin with seasoning the beef generously with salt and pepper. Then sear on all sides in a hot pan until nicely charred.

Roughly chop the onions, carrots, celery and garlic. Place in a baking tray and add the rosemary and thyme.

Pour in the beef stock, put a rack on top of the vegetables and place on the beef.

Place the beef in a pre-heated oven at 180c/350f . To cook to medium allow 20-25 minutes per 500g of meat.

Meanwhile slice the onions and get a pan on a medium-high heat. Add the butter and once its melted add the onions. Season with salt and pepper and cook down, stirring regularly until they begin to caramelise. Add the Worcestershire sauce and continue to cook until a deep brown colour.

Remove the beef and let it rest. Use a masher to press and squeeze the cooked vegetables. Then strain the liquid through a sieve, add a tbsp of Worcestershire sauce and keep warm.

Using a sharp carving knife, thinly slice the beef.

Warm the baguette in the oven and then slice open. Add plenty of beef, caramelised onions and Swiss cheese.

Place under the grill until the cheese is fully melted and beginning to brown.
Step 10
Slice in half, serve with the broth and enjoy!
