creamy sausagemeat pasta

this recipe for me was an attempt to recreate this one plate of pasta i had in Italy on holiday ages ago. although i could not match the 🤌🏻 of the Italian chef responsible for the sausage conchigli of dreams, this came so much closer than i hoped.

Instructions

Step 1
boil the pasta with 1tsp salt for about ten minutes until al dente: drain, toss with 1tsp oil, and set aside.
Step 2
open up the sausages and use a fork to get out the meat. fry over medium-high heat, breaking up with a spoon or spatula as it cooks, for 6-8 minutes or until completely browned. use a slotted spoon to transfer meat to a bowl and cover to keep warm.
Step 3
reduce heat to medium and add butter to the pan. once melted, stir in crushed garlic 1-2 minutes til fragrant. add mushrooms and sauté for 3-4 minutes until very tender.
Step 4
stir in chicken broth and heavy cream and simmer over medium-low heat until reduced (about 5-10 minutes)
Step 5
stir in the cooked sausage and pasta. season with salt and pepper to taste. top with parmesan and parsley
