Instructions
Step 1
Heat olive oil in a large skillet over medium heat.

Step 2
Brown chicken on all sides in hot oil, about 5 minutes each side
Step 3
Remove chicken and drain off excess grease, leaving tbsp or two
Step 4
Add chopped onion, bell pepper and garlic to hot skillet. Sauté until onion is tender
Step 5
Stir in tomatoes, stock, oregano, salt, pepper and bay leaf
Step 6
Add chicken back to sauce and bring to boil
Step 7
Reduce heat, cover and simmer for about 45 minutes or until chicken is cooked and tender
Step 8
Cook pasta while sauce simmers
Step 9
Discard bay leaf and serve with hot cooked pasta
