Add the tomatoes, red pepper and onion to a large roastjng dish. Add the Gnocci on top and cut up the feta in chunks, drizzle with oilve oil and honey. Add the cloves of garlic and oregano and bake in the oven for 20 minutes at 200 degrees. The tomatoes should be blistering when ready. When cooked add some spinch, if it is a bit stodgy add 100ml of boiling water. Top with more honey and parmesan.
