Ingredients

0.5onion
small, chopped
1carrot
small, peeled and chopped
1celery stalk
chopped
2garlic cloves
chopped
1egg
beaten
450gpork mince
200gparmesan
200gbreadcrumbs
70gpine nuts
40gpecorino romano cheese
grated
50mlcream
2 Tbspparsley
chopped
for the spaghetti al burro
Instructions
Step 1
preheat oven to 220oC
Step 2
line a baking tray with non stick baking paper
Step 3
to make the meatballs, put the onion, carrot and celery in a food processor and pulse until finely chopped, but dont blend into a puree
Step 4
put the chopped veg in a large bowl with all the other meatball ingredients and season generously with salt and pepper
Step 5
mix until everything is well combined, then form into large meatballs
Step 6
place the meatballs on the lined baking tray and bake in the oven for 15 to 20 minutes
Step 7
meanwhile cook the spaghetti in boiling water for 8 to 10 minutes
Step 8
reserve a mugful of pasta water before draining the pasta
Step 9
add the spaghetti to the softened butter in a large saucpan over a medium heat and cook for 1 minute to let the butter start to melt
Step 10
add three quaters of the grated cheese, then add the pasta cooking water a little at a time, stirring until you get a smooth sauce
Step 11
season lightly with salt and pepper
