Gluten-Free Crumbl Sugar Cookies are a copycat of Crumbl Cookies' signature cookie. These giant sugar cookies are soft and buttery, topped with a swirl of almond flavored buttercream frosting.

Instructions

Preheat oven to 350°F

Step 1
Line 2 cookie sheets with parchment paper.
Step 2
Cream butter & sugars together (2 min.) on med.-speed until light & fluffy.
Step 3
Whisk together remaining wet ingredients. Add to creamed mixture; beat again until well-combined & fluffy.
Step 4
In sm. bowl, whisk together dry ingredients; add to creamed mixture & blend until well-combined. The dough should be soft.
Step 5
Scoop ¼C-size portions of dough; place a few inches apart on cookie sheets. (6-7 cookies per sheet pan.)
Step 6
Gently press down cookies to ½”-¾” thick.
Step 7
Bake (13-15 min.) The cookies should spread a little, tops may be slightly crinkled, & bottoms should be light, golden brown.
Step 8
Remove from oven; cool on pans. Make frosting while the cookies cool.

Almond Buttercream

Step 9
Using mixer to combine softened butter & powdered sugar until incorporated & clumpy.
Step 10
Add almond extract; combine.
Step 11
Add cream, 1T at a time, mixing well after each addition. Stop when you've reached a soft, fluffy, spreadable consistency.
Step 12
When cookies are cool, spread a dollop of icing onto each cooled cookie with offset spatula or butter knife, finishing with a swirl.

Enjoy immediately or chill cookies, if desired. Store in airtight containers.

*Measure flour blend by weight if possible. Click the "Metric" button at the top of the ingredients list for weight measurements. If you don't have a scale: Fluff up your flour. Then gently spoon the flour into measuring cups and level off with a straight edge
