Ingredients

2 lbground beef

2 Tbsptomato paste

1onion
large, chopped

2 x 15 ozcans kidney beans
drained and rinsed

1 x 28 ozcan crushed tomatoes

1 cupWater

4cloves garlic
minced

1 Tbspchili powder

1 tspground cumin

1 tspdried oregano

½ tsppaprika

cayenne pepper
optional

kosher salt

freshly ground black pepper

Shredded cheddar
for serving, optional

Fritos
for serving, optional

green onions
Thinly sliced, for serving, optional
Instructions
Step 1
Heat a large skillet over medium-high heat. Add beef and onion and cook until meat is browned all over, about 4 minutes. (It doesn’t need to cook all the way through!) Drain fat, then stir in tomato paste.

Step 2
In a large slow cooker, combine beef, onion, kidney beans, crushed tomatoes, beer, garlic, chili powder, cumin, oregano, paprika, and cayenne. Season with salt and pepper.
Step 3
Cook on low for 6 and up to 8 hours. (The longer it's in the slow-cooker, the more flavor it gets.)

Step 4
Taste for seasonings. Serve warm with cheese, Fritos, and green onions, if using.
