Cold Peach Soup
You can substitute apricots or nectarines for the peaches. To peel these fruits
easily, put them in a bowl, cover with boiling water and let sit for a minute. Pour off hot water and let cool. The skins will slide right off. (This also works with tomatoes.)

Step 1
In a large bowl, thaw peaches and retain juice.
Step 2
Place peaches and juice, preserves, lemon juice, cinnamon and yogurt in a blender container and puree until smooth
Step 3
Pour into a pitcher and cover. Chill for 2 to 4 hours.
