Ingredients

288 gramsgluten-free all purpose flour
½ tspbaking soda
1 tsplemon juice
or lime, or vinegar
125 gramsvegan margarine
preferred, salted, room temperature
100 gramssunflower oil
100 gramswhite sugar
63 gramsicing sugar
75 gramsbanana
mashed & ripe
½ tspvanilla extract
½ tspalmond extract

2 tsplemon emulsion
Instructions
Oven Preparation
Step 1
Preheat oven to 375°F. If using a convection oven, best to set at 350°F. Prepare a baking tray with parchment paper.

Mash banana(s) and set aside.
Dough Preparation
Step 3
Whisk together flour, baking soda, and lemon juice into a medium sized bowl. Set aside.
Step 4
Using a mixer, on medium-high speed, blend together the butter, oil, and sugars until creamy and fluffy. About 2 minutes.
Step 5
Add in “egg.” Then add extracts. Add in dry ingredients gradually, cleaning the edges with a spatula.
Step 6
Fold in the sprinkles. Scoop about a teaspoon size scoop of dough onto prepared baking sheet, about 1.5-2 inches apart. About 8 cookies on a tray.
Step 7
Bake for 6-8 minutes, or until edges are golden brown.
Step 8
Let cool.

If making the Citrus Circus flavour, remove the almond extract and replace with a lime extract/juice.
