Garlic Mashed Cauliflower

Have you ever wanted a huge scoop of mashed potatoes but you promised yourself that you were going to start eating better ( yeah me neither) just kidding this dish is incredible. Now don't worry this book will not be all about healthy recipes because trust me this girl country girl needs her buttery mashed potatoes but when I create this dish I feel like I really accomplished my goal of eating right for the day!

Instructions
Step 1
Wash cauliflower and cut in chunks
Step 2
Combine cauliflower, water, bouillon cube, 1 tablespoon of salted butter and heavy cream minced garlic in saucepan and bring to a boil. Allow to boil for 20 minutes or until cauliflower is tender.
Step 3
Drain and reserve cooking liquid (save the stock you cooked cauliflower in, just in case you need some to adjust the consistency.
Step 4
Put tender cauliflower back in dry pan and begin to mash. Turn stove to low just to heat the dish.
Step 5
Once mashed add salt, pepper and remaining butter to taste and mix while slowly adding reserved liquid just a little at a time but only if its to thick for your liking.
