Tomato Pie

Tastes like a BLT sandwich, only better. The basil is what makes it so delicious. You will not regret this one. Use any favorite cheese for this recipe. Serve with a salad for a complete meal.

Instructions

Step 1
Step 1 Preheat oven to 375 degrees F (190 degrees C).

Step 2 In alternating layers, fill pastry shell with tomatoes, basil, scallions, bacon, garlic powder, oregano, and red pepper. In a small bowl, mix cheese with mayonnaise. Spread mixture over top of pie. Cover loosely with aluminum foil.

Step 3 Bake in preheated oven for 30 minutes. Remove foil from top of pie and bake an additional 30 minutes. Serve warm or cold.

Preheat oven to 375 degrees F.

Peel tomatoes and slice or cut into large dice. Place tomatoes in bowl and salt. Let stand 10-15 minutes. Remove tomatoes to paper towels leaving juices and seeds behind. Pat dry.
Step 6
Meanwhile, combine spices to make a mix.
Step 7
Bake pastry shell in oven on middle rack for 10 minutes.
Step 8
Combine spices, basil paste, bacon, green onion, and tomatoes; mix and add to pie shell. Mix cheese and mayonnaise; use to cover the top of the pie.
Step 9
Loosely cover pie with aluminum foil, bake 30 minutes. Remove aluminum foil and bake for 30 minutes more.
Step 10
Allow to cool. Serve warm or cold. Pairs well with a salad.
