4eggs
large, use up to 6 eggs for a 12-inch skillet

¼ cupunsweetened almond milk
or any milk

2garlic cloves
minced

¼ teaspoonsea salt
more for sprinkling

black pepper
Freshly ground

olive oil
for drizzling

4spring onions
or 1 onion, chopped

½ cupBroccoli
chopped

½ cupmushroom

½ cupmini mozzarella balls
halved, or shredded cheese

½ cupbasil
sliced

½ cupchicken breast
cut into small cubes
Instructions
Step 1
1. Preheat the oven to broil.
Step 2
2. Whisk the eggs, almond milk, garlic, and salt until well combined. Set aside.
Step 3
3. Heat ½ tablespoon olive oil in a 10 or 12-inch cast-iron skillet over medium heat. Add the chicken breast stir until chicken is moderately cooked, about 5 minutes, add onions, broccoli, and a pinch of salt and pepper and cook, stirring occasionally, until the veggies are tender but still bright green, about 5 minutes. Add the mushrooms, then add the egg mixture and gently shake the pan to distribute.
Step 4
4. Add the mozzarella and broil 5 mins with high and 3-5 minutes in low broil option or until the eggs are set. Season to taste and serve.
