Instructions

Step 1
Cook chicken drumsticks and remove meat.
Step 2
Put a small amount of oil in a frypan or wok and heat. (Use chicken juices at the beginning of cook or add a chicken stock cube when adding cream).
Step 3
Blend onion, pepper in the blender and add fry pan and fry until cooked through and bubbling. Do not over cook or you will loose the flavour of the onion and pepper.
Step 4
Add all spices to the pan and cook until fragrant.
Step 5
Add Peas (optional)
Step 6
Add mango stir then add coconut cream Heat through.
Step 7
Season to taste
