Step 1
Preheat the oven to 350°F

Step 2
Rub the oil over the fish and across the bottom of a roasting pan. Place the fish in the pan, skin-side down, and add the spring onions, garlic, and wine. Season with salt and pepper.

Step 3
Cover the pan with tinfoil and bake for 10 minutes.

Step 4
Uncover the pan and bake for 2 more minutes. The fish should be medium rare.
