Ingredients

1jalapeño
1habanero pepper
0.5yellow pepper
0.5onion
2 Tbspoil
2garlic cloves
minced
3roma tomatoes
diced small
1can evaporated milk
1 Tbspcornstarch
0.5 lbpepper Jack cheese
cubed
0.5 lbwhite cheddar cheese
cubed
1 tspsalt
1 tsponion powder
1 tsppaprika
Instructions
Step 1
With a food processor or blender, process the onion, pepper, habanero and jalapeño so it’s chopped into very small pieces. You can do this by hand as well if you do not have a processor.
Step 2
Add oil to your Dutch oven or large pot and heat over medium heat.
Step 3
Add your processed veggies to the pan and cook until soft, about 3 minutes. Stirring often.
Step 4
Add garlic and tomatoes and cook until fragrant, about 1 minute. Stirring often.
Step 5
Add evaporated milk and cornstarch. Bring to a simmer and let the mix slow boil for 3 minutes.
Step 6
Add cheese and cook until melted. Add seasoning and adjust to your tastes as needed.
Step 7
Serve immediately. If the queso hardens, simply rewarm in the microwave for 10 seconds and stir.
