Instructions
Step 1
1. Third fill a medium saucepan with water and bring to a gentle simmer.
Step 2
2. Break the eggs gently into the pan one at a time. Cook over a very low heat, with the water hardly bubbling, for 3–4 minutes, or until the whites are set and the yolks remain runny.

3. Meanwhile, place a small, non-stick frying pan over a medium heat. Add the bacon and dry fry for about 2–3 minutes on each side, until crispy.
Step 4
4. Divide the avocado between two plates and season with the lemon juice, a little salt and lots of ground black pepper.
Step 5
5. Drain the eggs with a slotted spoon and place on top of the avocado. Roughly chop the bacon and scatter over the eggs. Season with chilli flakes, if using, and a little more pepper. Serve immediately, with a few salad leaves, if you like.
